Try combining common garden mint with a few sprigs of peppery Vietnamese mint, for an extra kick. Makes 200ml
1 cup fresh mint leaves
125ml white vinegar
70ml cold water
2 tbs caster sugar
pinch salt and freshly ground black pepper
Place the mint into the hand blender beaker.
Attach the S-Blade to the blending arm and place the hand blender into the jug.
Chop on speed 5 moving the hand blender up and down in the herbs.
Pour in the vinegar, water, sugar, salt and pepper. Blend for 5 seconds or to desired consistency.
Chill before serving.
