Banana Loaf by Olivia Purvis

This humble, sweet banana loaf recipe is by Olivia Purvis, she writes a blog named What Olivia Did in London where she loves getting creative!


225g Self Raising Flour
1 teaspoon Ground Cinnamon
160g Caster Sugar
2 mashed Ripe Bananas
100g Unsalted Butter
1 teaspoon Baking Powder
2 Eggs, room temperature
2 tablespoons Milk

Cinnamon Sugar:
30g Caster Sugar
1 teaspoon Ground Cinnamon 



1. Preheat your oven to 180C, before mixing up your cinnamon sugar. Grease and line a loaf tin, and sprinkle the cinnamon sugar inside- saving a little for the top of your loaf too (for a delicious crunch).

2. Measure out all of your ingredients, before putting them all into your KitchenAid Mini Mixer. Start slowly, and mix for around 3 minutes- until everything is smooth and well combined. 


3. Scoop your mixture into your prepared loaf tin, sprinkling the last of the cinnamon sugar on top- before popping into the oven for around an hour (check at the 55 minute mark!).


4. Remove your loaf from the oven and cool. Enjoy with a cup of tea.
