Easy, delicious and nutritious... Enjoy an all day breakfast in the form of a toastie!
40g softened butter
8 x 1cm thick slices of sourdough bread
11⁄2 tablespoons Dijon mustard
1 cup (120g) grated cheddar cheese
4 thin slices ham off the bone
Salt and freshly ground black pepper
Avocado, sliced jalapeno and fried egg to serve
Spread butter onto one side of each slice of bread.
Spread Dijon mustard onto the unbuttered side of four of those slices.
Top each with half the cheese, a slice of ham and again with remaining cheese. Season with salt and freshly ground black pepper.
Cover with another bread slice, making sure that the buttered side is on the outside.
Toast until golden and crisp and heated through. Repeat with remaining sandwiches.
Serve each toastie topped with mashed avocado, jalapeno slices and a fried egg. Serve immediately.
