We are delighted and excited to have George supply us with his own very special Chocolate Mouse. Made with his own olive oil and following a chefs' own special technique. This recipe will surely delight! Thank you George!
Ingredients100 g GC extra virgin olive oil
100 g 55% dark chocolate
50 g 75% dark chocolate
250 g 35% fat cream
Gently melt the chocolate in a bowl standing over a pot of simmering water.
Stir in the GC extra virgin olive oil.
Place the cream into the mixing bowl of the KitchenAid Stand Mixer. Using the whisk attachment beat the cream on speed 4 to soft peaks only (do not over mix). Reduce mixer to speed 1 and add the chocolate mixture (the mixture needs to be at 42C).
Mix gently until just combined. Serve immediately.
